Our dishes, after being prepared in our cooking point, are blast chilled immediately after cooking to improve their shelf-life. They are then stored in ATM, protective atmosphere, a packaging technology that, thanks to the replacement of air with a mixture of carbon dioxide and nitrogen (two gases naturally present in the environment and defined by the European Directive 95/2/CE [1] [2]), allows to increase, without the addition of additives and preservatives, the shelf life of the products while maintaining their organoleptic properties and all the nutritional principles unaltered.
